    Editorial Reviews

"This handbook has a desirable balance between pure data sets and discussion of how the data relate to the practical understanding and possible treatment of nutritional diseases. This handbook should be made available to everyone in the medical, clinical, and food fields as a ready reference. I highly recommend that the readers of Inform ensure that a copy is available for their use."

-Joseph G. Endres, in Inform Magazine

"This handbook collects much useful information in one place, ranging from chemical diagrams to nutrient cycles and SI conversion factors. …assumes an understanding of nutrition and chemistry and is addressed to the practitioner, not the general public. Web resources are recommended where appropriate. There is a short section on animal nutrition with a list of useful Web sites."
